Salad & salad dressing
Grandmother Francine' Raw Beet Salad:
Yield: 4 servings Time: 25 minutes
Grandmother’s tips: remember to wear an apron when chopping or shredding beets, wash your board and hands afterwards or you’ll get red fingerprints everywhere.
Ingredients: 3 beets
3 carrots
Piece of fresh ginger (1" approx.) (anti-inflammatory and antioxidant)
1 apple (I always use MacIntosh)
For all your dressing a good rule is 3 oil for 1 vinegar. Mix together in a small mason jar' I used 250 ml, then shake well:
1/ 3 c of olive oil
3 tbsp. of apple cider vinegar (ACV) (restore pH balance, antifungal and support immune system)
1 tsp of Dijon mustard
2 cloves of garlic (immune booster, reduces inflammation)
1 tsp of maple syrup (optional)
Salt
Pepper
Dash of cayenne pepper (good for the heart)
Instruction: Shred beets, carrots and ginger, mix together
Shred the apple and add to the mix
Add the dressing and mix together
Enjoy!
Variance: lemon can be used instead of ACV, sesame seed oil instead of olive oil
